Welcome from Director

It is my pleasure to welcome you to the Cascade Culinary Institute® (CCI) - the Pacific Northwest's finest culinary arts education provider. The CCI faculty and staff are committed to your academic success in either the Culinary Arts or Baking & Pastry Arts Program. Instruction takes places in our classrooms in a contemporary methodology, and balances that of classical and modern techniques.

Student learning at CCI is grounded in a competency-based curriculum, which is based upon American Culinary Federation Foundation's Accrediting Commission standards. CCI faculty are committed to technologically-based instruction that is centered upon a daily lecture and demonstration format that is followed by a competency-based applied learning activity and final instructional assessment. Our curriculum delivers an integrated approach to sustainability from both an operational and instructional perspective, while our facility holds an Earth Advantage Gold Standard. In addition, the curriculum uniquely offers service-learning opportunities for students each quarter, where the faculty and staff formally give back to the regional community at large, and provide experiential learning that is grounded in service.

Our instructional team and staff are passionate about the field of culinary arts, and possess a strong experiential background as culinary innovators, restaurant operations experts and Executive Chefs from a diversity of industry segments. Our faculty complements our world-class 15,205 sq. ft. dedicated instructional facility. The Jungers Culinary Center, which opened in Fall 2011; is made up of three instructional kitchens, a 50-seat demonstration theatre, and a dining room that houses Elevation Restaurant, which serves as the Capstone course to both Programs.

Be sure to "shop around" and compare the curricular offerings, cost, and student-centered culture with other institutions; and you will discover that Cascade Culinary Institute is the place for you. Residents of CA, ID, NV and WA all receive tuition at the in-state (out of district) rate. Bend, Oregon boasts of a beautiful recreational surrounding with a diversity of outdoor activities and a density of restaurants and resorts that can serve as internship sites or post-graduation employers. Central Oregon, and Cascade Culinary Institute, offer a "study-hard, play-hard" environment for students, while also ensuring accommodation to a diversity of student learning styles, demographics and career goals. CCI, as a program of Central Oregon Community College, also provides a traditional learning environment that is supported with career preparation and placement services, student housing, and a diversity of social activities.

I would like to personally invite you to visit Cascade Culinary Institute and tour our facility. We host a Future Student Orientation every month, and would be glad to reserve a seat for you! Feel free to check us out on Facebook and contact us so you can take the next step in pursuing your culinary education!

Sincerely,

Gene Fritz, Ed.M, CCE
