Competitive Tuition Cascade Culinary Institute® (CCI) offers the Pacific Northwest's finest culinary arts education. Industry Relevant Curriculum and Instruction Beginning in Fall 2012, students pursuing an AAS in either Culinary Arts or Baking and Pastry Arts will progress through the seven quarter curriculum in a cohort-based educational model. Modern technologically-based delivery techniques are utilized to accommodate a diversity of student learning styles for both traditional and non-traditional students alike. The lecture / theory, demonstration, and hands-on applied instruction is classical in orientation and technique-centered; with an integrated approach with industry focused general education courses. Students will experience both math and writing courses that are co-taught by Chef Instructors, in order to providing a learning experience that has relevance to a career path in the restaurant industry. Students will also have the opportunity to select specialized elective course offerings that align with individual career goals. An e-portfolio will be leveraged throughout the curriculum in order for CCI students to document their learning via writing, photos, videos and blogging; which will serve as an applied resume post-graduation to support the placement process. An accelerated application-based program that is five quarters in length is also available for candidates with previous cooking experience who are seeking rapid career advancement. Modern and Sustainable Facility The Jungers Culinary Center, which opened in Fall 2011, serves as a cornerstone for Cascade Culinary Institute. The 15,205 sq. ft. facility was built to Earth Advantage Gold standards, and boasts of construction, operations, and instruction that is sustainable in orientation. The facility consists of a total of three instructional kitchens, a demonstration theatre, and a dining room that serves as an applied learning environment for regional community members as part of Elevation Restaurant.
